Today’s decadent and simple meal was inspired by my dad in celebration of Father’s Day. I had originally imagined making STEAK and POTATOES and other manly, Midwestern food, but whenever I think of my dad\u00a0and food, chocolate chip cookies are the first thing that comes to mind. (He’s had a lifelong obsession with them.) Cookies\u00a0are always followed closely by eggs and Dinty Moore stew (two things he made for me when I was little).<\/p>\n

Because eggs are permanently linked to pancakes in my mind, I thought making a chocolate chip cookie version might be in order, and let me tell you I was on to something kind of perfect.<\/p>\n

\"pancake-pieces\"<\/a><\/p>\n

Buttery and studded with chocolate, these taste like the pancake version of the classic cookie. They are light and faintly sweet. Served with a side of eggs, you have a breakfast, lunch or dinner guaranteed to make your favorite person feel special.<\/p>\n

<\/p>\n

Chocolate Chip Cookie Pancakes<\/strong>
\nServes 3 greedy people<\/em><\/p>\n

Ingredients:<\/strong>
\n1 egg
\n1 c. buttermilk
\n2 tbsp. coconut oil, melted
\n2 tbsp. brown sugar
\n1 tsp. vanilla
\n1\/2 c. white flour
\n1\/4 c. wheat flour, plus 2 tbsp.
\n1 tsp. baking powder
\n1\/2 tsp. baking soda
\n1\/4 tsp. salt
\n1\/4 c. chocolate chips
\n1 tbsp. unsalted butter<\/p>\n

Directions:<\/strong>
\nPreheat the oven to 200 F. Place a baking sheet inside. While it heats, crack an egg into a bowl and lightly whisk it. Add the buttermilk, melted coconut oil and vanilla next. Stir together. Next, mix in the dry ingredients. Be careful not to over mix. The batter will be lumpy. Now, add the chocolate chips, stirring to combine.<\/p>\n

Heat a non-stick skillet over medium heat. When warm, add a sliver of butter.\u00a0Now, pour the batter, a \u00bc cup at a time (I use a measuring cup for this.) into the pan. Tiny bubbles will appear on the surface of your pancakes as they cook. When the bubbles slow down, they\u2019re ready to flip. The second side cooks faster than the first, so keep an eye on them. You\u2019ll know they\u2019re done when they start to set-up. Place the finished pancakes in the oven on your baking sheet. Add another sliver of butter and repeat the previous steps.
