It&#8217;s so easy you can&#8217;t really call it a recipe, but the mere suggestion of it has been rattling around my head for over a month.<\/p>\n<p>I&#8217;ve been waiting for good watermelon. And finally, I bought one.<\/p>\n<p><a href=\"http:\/\/missalaneyus.files.wordpress.com\/2011\/08\/img_0940.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1282\" title=\"watermelon\" src=\"http:\/\/missalaneyus.files.wordpress.com\/2011\/08\/img_0940.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p><!--more-->The dish is simple: cubed watermelon tossed with lime zest and juice. That&#8217;s it. The magic of this simple side is how\u00a0well the flavors develop as it sits, which means you can make it for dinner and continue to eat\u00a0it with lunch over the next few days.\u00a0<\/p>\n<p>I believe she tosses mint in her&#8217;s, which is probably delicious and would\u00a0make\u00a0this more appropriate (i.e. prettier) for a shower. However, if\u00a0 you don&#8217;t have mint or in my case, are feeling to lazy to go outside in the 100+ degree temperature to pick it, don&#8217;t worry about it. It tastes great without it.<\/p>\n<p><strong>Lindsey&#8217;s Watermelon With Lime<\/strong><\/p>\n<p>1\/2 of a watermelon*<\/p>\n<p>1 lime, zest and juice<\/p>\n<p>Cube the watermelon, removing the rind and white parts.<\/p>\n<p><a href=\"http:\/\/missalaneyus.files.wordpress.com\/2011\/08\/img_0942.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1283\" title=\"cubed watermelon\" src=\"http:\/\/missalaneyus.files.wordpress.com\/2011\/08\/img_0942.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Add the zest from the lime. Then, squeeze in the juice. Toss together. At this point, feel free to sneak some pieces out of the bowl. Store whatever you don&#8217;t eat\u00a0 in the fridge. The flavors will get better as it sits.<\/p>\n<p><a href=\"http:\/\/missalaneyus.files.wordpress.com\/2011\/08\/img_0944.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1281\" title=\"Watermelon\" src=\"http:\/\/missalaneyus.files.wordpress.com\/2011\/08\/img_0944-e1313074083782.jpg?w=225\" alt=\"\" width=\"225\" height=\"300\" \/><\/a><\/p>\n<p>*<strong>Choosing a Melon<\/strong><\/p>\n<p>When picking any melon, look for one that&#8217;s small in size, but heavy. If it&#8217;s sliced in half, choose one that is darker and slightly wet looking.<\/p>\n<p>With canteloupe and pineapple, smell the rind of the unsliced fruit.
