For Christmas this year, my husband gave me a cookbook with the intention that he would make me meals out of it. While it hasn’t happened as often as he may have hoped, he’s managed to craft a few tasty dishes. One of the\u00a0items he successfully made\u00a0was fish tacos. They were delicious, but\u00a0to me,\u00a0the real star of the dish was the mango and avocado salsa that went on them. It was easy to put together and absolutely delicious. I wanted to eat it all the time and thought a turkey burger would be the perfect vehicle for it. Sometimes, I’m really on to something.<\/p>\n

Turkey\u00a0Burgers with a Mango & Avocado Salsa<\/strong><\/p>\n

Serves 2<\/em><\/p>\n

Ingredients<\/strong><\/p>\n

1\/2 \u00a0lb. ground turkey breast<\/p>\n

2 tbsp. feta<\/p>\n

1 tsp. Adobo seasoning<\/p>\n

1 tsp. Worcestershire sauce<\/p>\n

1\/2 c. diced mango<\/p>\n

1\/2 c. diced avocado<\/p>\n

1 tbsp. minced cilantro<\/p>\n

Juice from half a lime<\/p>\n

1 tbsp. mayo<\/p>\n

1 tbsp. salsa<\/p>\n

Spray a grill pan with non-stick spray and heat it to medium-high. \u00a0 In a bowl, combine the ground turkey, feta, Worcestershire, and adobo seasoning.\u00a0Mix with your hands until the ingredients are evenly distributed.<\/p>\n

\"\"<\/a><\/p>\n

Then, score the meat into two\u00a0sections with your hands. Shape each half into a patty.<\/p>\n

When the pan is hot, place the burgers on the grill. Turn the burger when you see white meat (cooked) starting to come up the sides of the patty (When meat is cooked, it will pull away from the grill, making it easier to flip.) Now, cook the other side.<\/p>\n

As the burgers cook, combine the avocado, mango, cilantro and \u00a0lime juice. Then,\u00a0season with salt and pepper. (This will make way too much salsa for two burgers, but it’s nice to snack on while you cook.)<\/p>\n

When both sides are browned and the sides of the patties are almost all white. Turn the heat to medium-low and tent a piece of aluminum foil over the burgers. This will keep the heat in and help your burgers cook evenly. Check the burgers periodically, flipping them as needed, to ensure they\u2019re cooked evenly and all the way through.<\/p>\n

Meanwhile, place the mayo in a small bowl. Add the salsa and stir together.\u00a0Spread the finished mayo on both sides of the\u00a0buns.<\/p>\n
