I had the pleasure of trying their strawberry pancakes with granola and sage. I liked the unexpected crunch of the granola and thought I could do my own twist using my basic pancake recipe. To switch it up, I added toasted almonds, blueberries and sliced strawberries. I also swapped my usual vanilla extract for almond and added in whole wheat flour. Replacing the sugar with honey adds a lovely floral note. The result is filling and fragrant. In my opinion, it would be a great way to kick off your 4th of July.<!--more--><\/p>\n<p><strong>Berry and Almond Pancakes<\/strong><\/p>\n<p><em>Makes about\u00a07 pancakes<\/em><\/p>\n<p>1 egg<\/p>\n<p>1 c. buttermilk<\/p>\n<p>2 tbsp. vegetable oil<\/p>\n<p>1 tbsp. honey<\/p>\n<p>1 tsp.\u00a0almond extract<\/p>\n<p>Zest and juice\u00a0from half a lemon<\/p>\n<p>1\/2\u00a0c. all-purpose flour<\/p>\n<p>1\/4 c. and 2 tbsp. whole wheat flour<\/p>\n<p>1 tsp. baking powder<\/p>\n<p>\u00bd tsp. baking soda<\/p>\n<p>\u00bc tsp. salt<\/p>\n<p>1\/4 c. blueberries<\/p>\n<p>1\/4 c. sliced strawberries<\/p>\n<p>1\/4 sliced almonds, toasted<\/p>\n<p>Heat a non-stick pan to medium-low\u00a0heat.<\/p>\n<p>Toast sliced almonds, and remove from pan when fragrant. While those are cooking, combine the berries, lemon zest and lemon juice in a small bowl.<\/p>\n<p style=\"text-align:center;\"><a href=\"http:\/\/missalaneyus.files.wordpress.com\/2012\/07\/pancakes-009.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"berries and lemon\" src=\"http:\/\/missalaneyus.files.wordpress.com\/2012\/07\/pancakes-009.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>In a large bowl, beat eggs. Next, stir in the\u00a0buttermilk, vegetable oil and\u00a0almond extract\u00a0with a whisk until combined. To the bowl, add the remaining dry ingredients, almonds, berries\u00a0and honey. Stir until just combined. The batter will be lumpy. Do not over mix.<\/p>\n<p><a href=\"http:\/\/missalaneyus.files.wordpress.com\/2012\/07\/pancakes-011.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-2094\" title=\"pancakes 011\" src=\"http:\/\/missalaneyus.files.wordpress.com\/2012\/07\/pancakes-011.jpg?w=300\" alt=\"\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Now, pour the batter, a\u00a01\/3 cup at a time (I use a measuring cup for this.)\u00a0to the pan. Tiny bubbles will appear on the surface of your pancakes as they cook. When the bubbles slow down, they\u2019re ready to flip. The second side cooks faster than the first, so keep an eye on them.
