I try to choose something easy and indulgent to make the evening feel more like a celebration.\u00a0A few weeks ago, I made calzones two ways. One was our usual preparation &#8211; beef, cheese and tomato sauce. The second was a new twist for us &#8211; crispy pancetta, ricotta and peas. Both were delicious, and using pizza dough from the store, the whole meal came together in about 30 to 45 minutes.<\/p>\n<p><a title=\"calzones-tomato by missalaneyus, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/misslaney\/15040964347\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm6.staticflickr.com\/5561\/15040964347_be561ee8bb_z.jpg\" alt=\"calzones-tomato\" width=\"600\" height=\"400\" \/><\/a><\/p>\n<p>Calzones are really filling, so I\u00a0cut each one into three pieces. That way, we each got to try a little of each. To go along with it,\u00a0I warmed up some of the <a href=\"http:\/\/www.missalaneyus.com\/wordpress4\/2014\/09\/11\/easiest-tomato-sauce\/\">easiest tomato sauce<\/a>\u00a0and served it on the side as a dip.<\/p>\n<p><a title=\"calzones-table by missalaneyus, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/misslaney\/15040957178\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm6.staticflickr.com\/5569\/15040957178_1279c5fcae_z.jpg\" alt=\"calzones-table\" width=\"600\" height=\"373\" \/><\/a><\/p>\n<p><!--more--><\/p>\n<p><strong>Tomato, Hamburger and Cheese Calzones<\/strong><\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p>Pizza dough (I love Whole Foods&#8217; whole grain version.)<\/p>\n<p>1\/2 lb. hamburger<\/p>\n<p>1\/4 c. tomato sauce<\/p>\n<p>2 tbsp. Parmigiano-Reggiano, grated<\/p>\n<p>3 tbsp. mozzarella, grated<\/p>\n<p>1\/4 tsp. Italian herb seasoning<\/p>\n<p>1 tbsp. extra virgin olive oil<\/p>\n<p>Salt and pepper<\/p>\n<p><em>Directions:<\/em><\/p>\n<p>Preheat the oven to 450 degrees. Grease a baking sheet. Brown the hamburger over medium heat. Season with salt and pepper.<\/p>\n<p>Cut the pizza dough in half. Spread it out into a circle. It should be about a 1\/2 inch thick. Spread the tomato sauce over half the dough. Don&#8217;t over do it. If you do, you&#8217;ll have boiling sauce spilling out of your calzone. Not good.<\/p>\n<p>Then, add the cooked beef. Sprinkle with mozzarella, Parmigiano-Reggiano and Italian herb seasoning, keeping the filling on one side.<\/p>\n<p><a title=\"beef-calzones by missalaneyus, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/misslaney\/15224445551\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm6.staticflickr.com\/5585\/15224445551_33fdae0906_z.jpg\" alt=\"beef-calzones\" width=\"600\" height=\"363\" \/><\/a><\/p>\n<p>Fold the dough back over. Starting at one end begin to twist and pinch the dough together, creating a half moon shape. It doesn&#8217;t have to be exact. Next, brush on extra virgin olive oil and sprinkle the Italian herb seasoning on the top. Cut a slit in the top to vent. Bake for 20 to 30 minutes or until golden brown.<\/p>\n<p><a title=\"calzones by missalaneyus, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/misslaney\/15224445461\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm4.staticflickr.com\/3909\/15224445461_6a2445efe7_z.jpg\" alt=\"calzones\" width=\"600\" height=\"270\" \/><\/a><\/p>\n<p><strong>Ricotta, Pancetta and Pea Calzones<\/strong><\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p>2 oz. pancetta<\/p>\n<p>1\/2 c. ricotta<\/p>\n<p>1\/4 c. frozen peas, thawed<\/p>\n<p>1\/4 c.\u00a0Parmigiano-Reggiano, grated<\/p>\n<p>1 tbsp. extra virgin olive oil<\/p>\n<p>Salt and pepper, to taste<\/p>\n<p><em>Directions:\u00a0<\/em><\/p>\n<p>Preheat the oven to 450 degrees. Grease a baking sheet. Chop the pancetta and heat in a non-stick pan over medium heat. Cook until crisp. Then, remove from the pan and put on a plate with a paper towel to drain.<\/p>\n<p>While the pancetta cools, spread the remaining pizza dough into a circle. It should be about a 1\/2 inch thick.<\/p>\n<p>In a separate bowl, stir together the ricotta, cooled pancetta, peas and parm.
