Here I am, glamorously watching T.V. in my polka dot socks. This is real life, people, and those socks are comfy.
But enough about them, we should talking about what’s in that bowl – pizza popcorn. Piping hot popcorn is tossed with freshly grated Parmigiano Reggiano, Italian seasoning, crushed red pepper flakes and extra virgin olive oil. It is addictive in the best way.
Serves 2 greedy people or 4 polite ones
1/4 c. extra virgin olive oil, plus 1 tbsp.
1/2 c. popcorn kernels
1 tsp. Italian seasoning
1/4 tsp. crushed red pepper flakes
1/4 c. grated Parmigiano Reggiano, divided
Salt and pepper, to taste
Heat 1/4 c. extra virgin olive oil and the popcorn kernels over medium in a large pot with the lid on. When the first kernel pops, start to shake the pot. Keep moving the popcorn around until the popping slows down and there are longer pauses between each one. Remove from heat and dump the popcorn into a large bowl.
To the hot popcorn, add the Italian seasoning, crushed red pepper flakes, reserved tablespoon of evoo and 2 tbsp. of cheese, along with a good sprinkling of salt and freshly cracked black pepper. Mix together. Add the second two tablespoons of cheese. Mix the popcorn again. Taste and adjust, adding more salt and heat to fit your taste buds.
