A bowl of this oatmeal is the perfect antidote to the cold weather. Make this for breakfast or even a snack. With just a handful of ingredients, it’s ready in under 15 minutes and tastes just like its cookie counterpart.
Oatmeal Cookie Oatmeal
Serves 2 greedy people
2 1/4 c. water
1 c. rolled oats
A pinch of salt
1 tbsp. maple syrup
1 tbsp. almond milk
1/2 tbsp. butter
1 tsp. cinnamon
1 tsp. vanilla
2 tbsp. golden raisins
In a saucepan, combine the water, oats and a pinch of salt. Bring to a boil over high heat. When boiling, reduce to low and cook until the water is absorbed and the oats are tender – about 6 minutes. Then, off the heat, add the maple syrup, almond milk, butter, cinnamon, vanilla and raisins. Stir and enjoy!
